  1. Heat up a skillet on medium heat. Shred the cheese, and drain the black beans.
  2. Put 2 large spoonfuls of black beans into a line on one side of the tortilla. Then, cover that pile with a mixture of the two cheeses.
  3. Now, the tricky part: roll up the tortilla from the end with the beans and cheese, folding in the sides so that none of the goodness can escape.
  4. Place the rolled burrito <b>with the 'flap' down</b> onto the griddle. <br />rn<br />rnThis way, this part of the tortilla will crisp quickly, so when you move it, you won't have to worry about it unrolling.
  5. Turn the burrito over, cooking each side until golden brown, and the filling is melted.
  6. Serve directly onto a plate and enjoy!
